By taking a pinch and letting the flakes hit your elbow to disperse them over the dish (typically a steak). My grandparents are from Maldon and both they and I just use it like normal salt, put it in a grinder for fine, crush between fingers for medium and just sprinkle as is for a nice crunchy “finishing” salt.
